TEA
Tea is an aromatic beverage commonly prepared with boiled water over cured leaves of the Camellia sinensis, an evergreen shrub native to Asia. After water, it is the most widely consumed beverage in the world. Some teas, like Darjeeling and Chinese greens, have a cooling, slightly bitter flavour, while others have sweet, nutty, floral, or grassy notes.
Tea originated in China as a medicinal drink. It came to the West via Portuguese priests and merchants, introduced to it there during the 16th century. Drinking tea became fashionable among Britons during the 17th century and they introduced it in India.
Steeping is the process of making a cup of tea; it is also referred to as brewing. In general, two grams of tea per 100 ml of water, or about one teaspoon of green tea per five-ounce (150 ml) cup, should be used. With very high-quality teas like gyokuro, more than this amount of leaf is used, and the leaf is steeped multiple times for short durations.
Some teas are prepared for drinking by steeping the leaves in boiled water to release the flavour and nutrients. Loose tea or tea bags are prepared for drinking by steeping the leaves in just boiled or heated water to release the flavour and nutrients in the dried tea into the water. This is often done in a cup, mug, teapot, pitcher or urn. A tea infuser or a tea strainer may be used to assist in this process.
