Genus:Cinnamomum

This spice is obtained from the inner bark of several trees from the
species Cinnamon .It is used in both sweet and savoury foods.  The best
quality Cinnamon is produced in idukki district of Kerala state in
Western Ghats, where it gets the most favourable climatic conditions
which give unique quality and flavour. The Eastland Industries is
introducing the farm fresh cinnamon in fine and air tight packing to the
international market. This is processed like this; stems are cut and
processed by scraping off the outer bark, then beating the branch evenly
with a hammer to loosen the inner bark, which is then pried off in long
rolls. This is used in cookery as a condiment and flavouring material.
It is used as alcohol flavouring agent also.
