It is widely used as a spice and medicine. India is the largest
producer. The best quality ginger from the farms of Idukki District of

spice. It is pickled in vinegar. It is steeped in boiling water to make
Ginger Tea and Coffee. It is a common ingredient of Korean, Chinese,
Japanese, Vietnamese and many south Asian cuisines for flavouring dishes
such as seafood, meat and vegetarian dishes. In Indian cuisine, ginger
is used in thicker gravies and in traditional drinks, both cold and hot
including spiced ‘Masala Chai’.
Dry ginger is an ingredient in Ayurvedic medicines.
